Eylan meaning “proclamation” in Hindi opened in January 2025 in Menlo Park as a confident new chapter in the group’s Cal-Indian journey. Conceived as a sibling to Copra and Ettan, Eylan expands the culinary narrative through a distinct identity rooted in wood-fired cooking and a farm-to-table philosophy, offering a gentler, more nuanced expression of the Indian palate. The experience is shaped by refined hospitality and a striking Art Deco–inspired design, creating a space that feels both contemporary and timeless.

Eylan’s vision is to deepen and evolve the group’s Cal-Indian narrative through a distinct culinary and experiential identity. Anchored in wood-fired cooking and a farm-to-table philosophy, the restaurant brings a lighter, more nuanced interpretation of Indian flavors to the forefront.
